Food as a Conversation Between Cultures
01 / 05
We believe food is about bringing people together. Drawing inspiration from the communal food cultures of the Mediterranean, Middle East and South-East Asia, our menu is designed for passing plates, trying a little of everything and discovering flavours together.
We wanted to create a space that feels familiar: a great record, a few shared dishes and another round. Whether you’re here for a quick bite or a long evening, the experience is built around the idea that the best moments happen when they’re shared.
We don’t set out to recreate traditional dishes or follow a single cuisine. Instead we let the flavours, techniques and traditions that have shaped us meet in unexpected ways. As Head Chef Rafail Papimitoglou puts it, “It’s a conversation between cultures.”
Lebanese spices might find their way into Chinese-style dumplings. Japanese techniques refine Middle Eastern ingredients. Greek influences sit alongside flavours from Singapore and beyond. Familiar enough to feel comforting, yet layered enough to spark curiosity.
We cannot get enough of the hand-folded Shish Barak Dumplings: Lebanese seven-spiced meat wrapped in delicate Chinese-style dumpling dough. And the Devon Crab Brioche: fresh crab from East London’s Fin & Flounder on crispy brioche, with smoked Napa cabbage, turnip and home-made Gochujang aioli.
Have an idea for the table? If you’re a chef, cook, supper club, producer or food creative with an idea to share, from guest takeovers to collaborative dinners, we’d love to explore it. Drop us a line at rafail@madcats.uk.
